Bourbon is a natural mutation of Typica which was discovered on the island of Bourbon, now called Reunion Island. It has a higher yield than Typica. It is characterized by greater sweetness than other varieties. However, this varietal has unfortunately has fallen out of favor with many growers in exchange for even higher-yielding modern varietals that have less sweet taste profile.
