A dark sugar and spice concoction is raised from the ground coffee, and has elements of cinnamon and caramelized sweetness of an upside down cake. After pouring water, the crust that forms at the top smells like warm gingerbread, with sweet smells reminiscent of dark brown sugar, and honey bran muffin. The cup shows flavors of raw sugars with much of the potent molasses content still intact, with honey aroma as the cup begins to cool. Body is substantial and gives this coffee some heft in terms of intensity. This description is from the cupping notes of our coffee importer, Sweet Maria's
