The dry fragrance shows complex sugars in sweetness, with mild dried fruit hints and subtle spice accents that weave in and out of the profile. Adding hot water coaxes out deeper sweetness that has elements of fruits and caramelized sugars, like a fruit upside down cake. City and City+ roasts have syrupy sweetness in the cup, revealing layers of unrefined sugars as the coffee cools off some, along with a mix of fruited accents. The coffee has a nice balanced bittersweet core flavor that cools to hints of coconut palm sugar, honey orange tea, sweet lemon, and a grabby citrus peel aspect in the finish. Like the coffees from neighboring Kenya, Tanzanian coffee can have mouth cleansing acidity, and this Tarime lot does not disappoint when kept to a light roast level. A tartness builds as the temperature dips, with tea-like impressions in flavor and brisk brightness. Full City roasts develop Tarime's bittersweetness, as you'd expect, and our darkest recommended roast level of Full City yields a flavor of high % cacao bar, slightly fruited, with a cinnamon spice note in the finish.
