The dry fragrance and aroma show somewhat overt fruit and spice notes, wrapped in a sweet layer of dark brown sugar and with a roasted corn accent. Made for a fantastic pour-over brew, with a dried green apple and raisin flavor notes, along with unrefined sweetness that comes through like date sugar. The acidity has a mouth-refreshing quality like citrus and finishing flavors nod to aromatic cedar shakes and soft baking spices. Offers a delicious fruited chocolate flavor that reminded me of chocolate-covered dried pear. Body is immense along the roast spectrum, and while somewhat rounded off, acidity still comes through like fruit juice.
