Baroida always offers quite a sweet cup that shows well in a variety of brew methods, and I've been enjoying it as a pour over myself. City+ roast level is a good starting point where raw sugar notes gain a 'caramelized' aspect from the toasty roast tone underneath, with fruited dimension, and some acidity. The aroma has pungent sweetness with accents that are fruited and herbal The sweetness in the cup is complex, a little rustic, like date and palm sugars. The coffee opens up to hints of caramel popcorn, honey wheat puff cereal, and dark steeped tea. Acidity is on the side of black tea and the finishing flavor has a strong tannic aspect. Full City roasts offer a fruited cocoa flavor that reminded me of chocolate-covered dried dates. Body is immense along the roast spectrum, and while somewhat rounded off, acidity still makes an impression when roasted to the darker end of our roast recommendations.
