This fresh lot of Papua New Guinea Kuta Waghi has a sweet scent that transfers from freshly ground coffee to wet aromatics that, with fruited hints accenting a nice base bittersweetness. This carries through to the brewed coffee, and City+ roasting brings out demerara simple syrup, honey, with some understated dried fruits. The fruit aspects in the cup also have a mild presence, but came across like red raisin, and dried persimmon that adds some tartness to the base sweetness. The aftertastes shows ample bittering that points to tannic tea, and darker roast levels develop a complex unsweetened cocoa powder note in the finish. Light roasts have moderate acidity, without being sharp or acerbic, but well-integrated into the cup flavors. Keeping the roast range to City-Full City will capture Kuta Waghi's sweetness and should land some of those milder top notes in the cup too.
