Sweet smells of baking spices and tea are released in the ground coffee, a sort of bergamot orange/Earl Grey tea note that accents sweetness. The wet aroma stretches sweet raw sugar smells to the outer limits, displaying caramelizing sugar and spiced sweetness that has elements of coffee cake crust at its peak. Yields a cup that has black tea-like characteristics amidst sugar-browning sweetness and a tannic bittering quality. As it cools, fruited flavors start to come up and the sweetness straddles the line between raw sugars and fruit pectins. Accent notes we picked up on included raisin, apple pie filling and red berries. The finish is dotted with baking spice suggestions that hint at 5 spice and Darjeeling. This is a near perfect cup, balanced core bittersweetness and delicate top notes, along with acidity that leaves a lemon-like impression on your palate. It's not overly bright/citric, but more like the understated tartness of water with a spritz of lemon. You also get a complex and rich dark chocolate/cherry flavor that reminds me of those chocolate covered dried whole cherries.
