I feel like we say this often, but this lot in terms of flavor is truly about as 'un-decaf' as they come. Cupping after 24 hours rest was a real treat and revisiting the brew over the course of a weekend reinforced this notion. The dry fragrance has strong chocolate notes with molasses undertones, burned sugar and stone fruit accents. Brown sugars are emphasized in the wet aroma, with a fruited aspect of dried tamarind and warming spice accents the steam when running my spoon through the wetted crust. Impressive sweetness is found in the brewed coffee and flavors come off like peach caramelized with brown sugar. The cup is filled with fruit and unrefined sugars, sweet spice like cinnamon and chai and mild acidity (another reason it stands out against other decafs). I should point out that first crack is very hard to hear, and color looks much darker relative to degree of roast. A bit tricky to roast, but very rewarding for its sweetness - and the fact it really doesn't have a 'decaf-y' flavor at all!
