Honey Process How does coffee move from a red cherry on a coffee tree to a green seed entering a roaster? Processing. Most coffees are either wet processed or dry processed. The Honey process meets these two in the middle as a way to conserve water. Some but not all of the mucilage is stripped off in a wet huller, then the beans are dried with the remaining mucilage on, imparting a sweet fruit taste to the bean from the mucilage.
