Comparing a mild-toned Brazil to this Timor really helped to highlight this coffee's interesting, though subtle, top notes. The aroma shows spiced and herbal accents atop smells of raw turbinado sugar. The cup has a similar sweet undercurrent, top notes of cinnamon, red bell pepper and lemon provide contrasting accents. I had intense bittering like cacao nibs. And while not the sweetest at this roast, the cup showed a unique peppery note that along with the smokey tones, presented a flavor that reminded me of a Sumatran-leaf cigar.
