This wet process lot from Shantawene had sweet-spice notes in the dry fragrance, raw brown sugar, whole spices, like caraway seed, and anise. The wet aroma had an appealing honey note, along with hints of date sugar, and dried flowers. In the cup, City roasts offer a somewhat transparent sweetness with nice level of intensity. The flavor accents were like turbinado sugar (think 'Sugar in the Raw' packets) and simple syrup that draw out some of the more delicate cup flavors. A vibrant citrus note cut through my light roasts, and with the underlying sweetness, had a flavor aspect of sweetened black tea with lemon. As the coffee cooled, I caught a glimpse of jasmine pearl green tea, cardamom, sage, and a complex rue herbal note, that brought a nice aromatic overlay to the cup flavors. Give it some time after brewing for fruited hints to crop up, like dried stone fruit, and lemon. This description is from the cupping notes of our coffee importer, Sweet Maria's
