This Chiroso variety selection pushed the boundaries on fruit flavors for a washed coffee, which was not a bad thing! I'd bet the long fermentation was at play, but this particular variety is also known for displaying bright flavors and fruits too. The fragrance showed accents of honey and panela, with lovely red fruits. The sweetness in the wet aroma smelled syrupy, like berry sauce, or jam cooked with brown sugars. Brewing a City roast, I was impressed by the confluence of fruit flavors and bittersweet intensity. It wasn't like a dry process coffee exactly, but some of the characteristics ticked off the same boxes that some of our cleaner naturals do; syrupy, bodied, and bittersweet potential. Fruited notes began to emerge as the cup cooled, with notes of baked apple, raspberry, and delicious red fruits from front to back. The cup acidity also had a fruit quality that came off malic for me, like the clean mouthfeel of an apple or pear. This coffee will no doubt show well dark too, but we're keeping the recommended range to the light side of the spectrum in order to highlight acidity and top notes, rather than bittersweetness and body.
