The dry grounds show a composite of molasses sugars, dark dried fruits, and the sweet smokiness of roasted nuts. You'll notice a complex set of smells, and the wet aroma offered more of a glimpse into the cup characteristics to come. Also you'll note a nice baked apple smell, with toffee and sugar, cinnamon accents, like a fruit crumble. Breaking through the crust presents an herbaceous side, subtle tobacco and fresh Thai basil notes. The coffee brews so well, with a nice middle ground between raw cane juice sweetness and bittersweet chocolate tones. It isn't until the coffee cools considerably that top notes draw your attention, red apple, almond bark, and herbal horehound candy. Definitely a crowd pleasing cup in terms of balance and simple, yet succinct flavors, and with a perceived acidity that's like fruit juice adding a mouth cleansing effect in the finish.
