Product Description

This lot of Las Estrellas has an amazing profile of complex, fruited sweetness, and truly lives up to its name! The dry fragrance is laced with smells of fresh and dried fruits, panela sugar, and winey accent notes. The sweetness found in wet grounds conjures up images of applesauce with cinnamon, stone fruits, and fragrant sugar smells too, like muscovado, and torched brown sugar. The sweetness of Las Estrellas has honey-like flavor, along with substantial fruits. Top notes come into focus as you work your way through the cup, with a lovely red apple flavor, tangy golden plum, and dried apricots. The acidic impression in the light roasts has a stone fruit feel to it too that adds juicy brightness to the cup. There's also a ripe/winey element that comes through as the coffee cools down, that brought to mind fruity young wines. I get chocolate, and graham cracker notes at Full City, that hinted at S'mores, along with an understated plum note, and loads of chocolate syrup. The sweetness is impressive and makes for a remarkably balanced cup when roasted dark, and body is about as thick it gets.
