At City roast level, the dry fragrance is enmeshed with butterscotch and red fruit hints, a big sweetness that has elements browned sugars too. With a shade more roast development the raw sugar smells are a bit more intense, especially in the wet grounds where the coffee aromatics build into something like pressed cane juice and caramels. The cup at City and City+ revolves around a moderate sweet core flavor of raw sugars, branching out to subtle accents of caramel apple, and dried peach. The acidic impression has characteristics of orange peel, adding a rindy touch to the brew at lighter City and City+ roast levels. Taking the roast to Full City lays down a ribbon of cacao/chocolate bar, bittersweet and dominant, accompanied by a subtle hint of dark fruit. Full City roasts are delicious as espresso, and patch together dark chocolate syrup with dried raisin accent into a bittersweet shot with some spiced aromatics in the finish.
