What lovely, and delicate floral character this lot from Tabe shows, perfumed qualities that are uniquely 'Guji'. The fragrance is so clean, with a transparent underlying sweetness that props up lovely jasmine and violet floral accents. The wet aroma blooms with sweet floral character too, along with a spiced ginger note in light roasts, while my City+ roast hints at darker fruit to come in the cup. The floral flavor and aroma come through loud and clear in the cup regardless of temparature, and have elements of star jasmine, lilac, and a fruited floral note of Meyer lemon. 'Lemon' is a fairly accurate descriptor of acidity too, with a bracing quality that provides a high-toned piquant character for this coffee, particularly in the lighter roast levels. 'Gingerbread' perfectly describes a spicy sweetness, underpinned by honey and caramelized sugar as the coffee cools off a bit. City+ roasting yields convincing sweetness too, dark molasses sugars coalesce with faint bittersweet flavors of fine Dutch cocoa powder. The floral character still comes through at this roast level, but has the perfumed quality of blueberries at peak ripeness.
