Natural Anaerobic How does coffee move from a red cherry on a coffee tree to a green seed entering a roaster? Processing. Most coffees are either wet processed or dry processed. Anaerobic natural processing involves fermenting the outer fruit pulp of the coffee cherry in sealed tanks deprived of oxygen by pumping the tanks full of CO2. This fermentation helps to strip away the outer pulp and leave just the seed (bean).
