Now that we've gathered all we need, let's starting brewing! Follow these step:
Fill your kettle with water and boil.
Place the paper filter into the brew basket and place the brew basket above the vessel. Pour hot water through the filter, ensuring the entire paper is wetted. This eliminates any papery taste in the final brewed coffee.
Grind the necessary amount of coffee beans based on the chart above. Dispose of the water in the vessel from step two. Place grounds in the paper filter and tap the brew basket against the table one or twice to settle the grounds. Replace the basket on top of the vessel and place the entire unit onto your scale. Tare the scale to ZERO.
Pour 100 grams of water onto the grounds ensuring that the entire mass of grounds is wetted. Let sit for about a minute.
After about a minute, pour 100 grams of water around the surface of the grounds slowly and steadily. Try to wet all the bed but pour with the flow heading towards the center of the basket. You'll notice the water flowing down out of the basket into the vessel below. As the 100 grams depart the top grounds, begin pouring another 100 grams of water into the basket as directed at the beginning of Step Five.
Continue with Step Five until your scale has arrived at your goal water weight from the chart above.
